- 2-3 carrots
- 4 eggs
- 150 g of brown sugar
- 150 g whole wheat flour
- 6 walnuts, chopped
- A pinch of nutmeg
- half a teaspoon of cinnamon
- a pinch of salt
- 1 teaspoon baking powder
- 75 ml olive oil
To make the cream:
- 100 g icing sugar
- 250g cream cheese (Philadelphia)
We put the eggs with sugar in a bowl, beat until we get a foamy consistency. Add oil, salt, cinnamon and nutmeg, mix. Add the yeast flour, mix and put the grated carrots with walnuts.
We put the dough in a 20 cm prepared mold and put in a preheated oven at 180ºC for 40-45 minutes..
When the cake is done, we take it out and stop cooling for about 10 minutes and then we unmold it.
We will make the cream:
Mix the cream and icing sugar until we get a cream without lumps. We reserve in the fridge.
We assemble the cake:
We cut the cake in half and cover a part with the cream.
We put the other half on top and cover the entire cake with the rest of the cream. Afterwards, we take it to the fridge and leave it for at least 1 hour.
