Spinach coca with goat cheese and caramelized onion

Mass:

Dissolve 1 sachet of baking powder in 1/2 glass of warm milk.

Add 1/2 glass of oil and 2.5 glasses of flour and salt to taste.

Let it rest covered for about 30 minutes.

Caramelized onion:

Chop 3 onions in julienne strips, then add 3-4 tablespoons of sugar and in about 20 minutes add (at the end) 1/2 glass of vinegar.

Elaboration:

We put the dough in the oven, preheating it for about 15 minutes (175ºC), then we remove it and fill it with previously cooked spinach, with goat cheese and onion. We send back to the oven for about 15-20 minutes (175ºC).
