1 carrot cake.
240 g grated carrot
2 large eggs
70 g of ground almonds
80 g of ground hazelnut
5 ml of vanilla essence
a pinch of salt
2 egg whites
3 g ginger
5 g of baking soda
Elaboration: We heat the oven to 180ºC and prepare a rectangular mold of about 20 cm. We mix grated carrots with the juice of 1/2 of a lemon, we reserve. We beat the eggs with the vanilla using whisk. We add the hazelnut, almond, bicarbonate, spices and salt. We stir and add the carrot, mix well. We mount the egg whites in another bowl with the enveloping movements. We take the mold and add the cinnamon. Bake for 40 minutes, puncture the center with a toothpick to verify that it is practically clean. Let cool a little before unmolding.
2. Creamy banana ice cream.
2 ripe bananas
1 tablespoon butter or peanut butter
Elaboration: Peel and slice the bananas. Freeze for 2 hours. Place in a blender or mincer glass. Blend on high speed, stirring occasionally, to prevent sticking, until creamy. Add the peanut butter or butter and blend again until the texture is homogeneous. Can be frozen in an airtight container or served directly.
3. Light cheese cake.
3 large egg whites
1 pinch of salt
40 g sugar or sweetener
5 ml of vanilla essence
500 g of skimmed yogurt
500 g of skimmed whipped cheese
sugar-free strawberry jam
60 g of cornstarch (cornstarch)
Elaboration: We heat the oven to 180ºC and prepare a removable round mold. We cover the bottom with paper. Beat (whisk) the eggs, sugar and whites, until foamy. Add the vanilla, salt, cheese, lemon zest and yogurt. We beat and add the cornstarch. We beat again until there are no lumps. Fill the mold and bake for 45-55 minutes (it depends on the oven). We prick with a stick, it should come out almost clean. Cool out of the oven, remove from the ring of the mold and let cool. We leave the whole night in the fridge with the plastic wrap. Serve with unsweetened jam.
4. Healthy brownie.
50 g of hazelnuts
100 g walnuts
25 g cocoa powder
a pinch of vanilla
a pinch of salt
1 tablespoon cocoa powder (to sprinkle on top)
Elaboration: Process the nuts, vanilla and cocoa powder, salt and dates until you get a dough with a moldable consistency. Grind the hazelnuts until you get a few pieces, add them in the dough. Put the dough in a square mold with height 2 0 3 cm. Cut into square portions. Sprinkle the cocoa on top.
5. Rice pudding (gluten-free, lactose-free).
100 g of rice (round)
1 almond milk
1 cinnamon stick
3 tablespoons of brown sugar
Elaboration: In a very deep bowl we add almond milk and rice. We stir well and heat over medium heat until it reaches a boil. Add the orange peel (not all) and lemon, along with the cinnamon, to the milk and rice mixture. Simmer for about 40 minutes. Every 5 minutes stir so that the rice does not stick. Add the sugar, mix and cook for another 5 minutes. Remove from heat, cover with a plastic wrap and let cool completely. Remove the orange, lemon and cinnamon sticks. Put the dough in a mold (some individual ones) and keep in the fridge. A few minutes before serving, sprinkle with the brown sugar and place it in the highest part of the oven, connect the grill for a few minutes until it caramelizes.
